One cup of unsweetened cocoa powder weighs about 84 grams (3 ounces). Cocoa is light and fluffy, so a cup of it weighs less than half as much as a cup of sugar, and a heaping cup versus a level one can noticeably change a batter.

Fractions work too, for example 1/3 or 1 1/2.

Natural vs. Dutch-process cocoa
Natural and Dutch-process cocoa weigh about the same per cup, but they aren't always interchangeable. Natural cocoa is acidic and is often paired with baking soda, which needs an acid to create lift. Dutch-process cocoa has been treated to neutralize its acidity, giving it a darker color and mellower flavor, and recipes built around it usually rely on baking powder.
In recipes with little or no leavening, such as brownies, frostings and hot cocoa, the two can usually be swapped by weight.
Tips for measuring unsweetened cocoa powder
- Cocoa clumps easily. Whisk or sift it before measuring, or weigh it and sift it straight into the bowl.
- Spoon cocoa into the cup gently and level it. Scooping directly from the canister packs it down.
- Cocoa absorbs liquid much like flour does, so extra cocoa makes cakes drier as well as more chocolaty.
Frequently asked questions

Sources and method
The cup weight on this page comes from King Arthur Baking's Ingredient Weight Chart, which lists unsweetened cocoa powder as 1/2 cup = 1 1/2 oz = 42 g. All other figures are calculated from that weight using a US customary cup (236.6 mL), 16 tablespoons per cup and 3 teaspoons per tablespoon. Using a 250 mL metric cup? Multiply the grams by about 1.06. Brand, humidity and measuring technique can shift real-world weights by a few percent, so weigh when precision matters.
