One cup of granulated white sugar weighs 198 grams (7 ounces), and many cooks simply round it to 200 grams. Sugar is one of the most dependable ingredients to measure by volume, because its crystals don't compress the way flour does.

Fractions work too, for example 1/3 or 1 1/2.

Sugar types by weight
Different sugars fill a cup very differently. Using King Arthur Baking's figures, a cup of superfine (caster) sugar weighs about 190 g, packed brown sugar about 213 g, turbinado sugar about 180 g, and unsifted powdered sugar only about 113 g.
That's why substituting one sugar for another by the cup can change both sweetness and texture. Swapping by weight keeps the amount of sugar the same.
Tips for measuring granulated sugar
- Scooping straight from the bag and leveling with a knife works fine for granulated sugar; you don't need the spoon-and-level method used for flour.
- Caster sugar in British and European recipes is simply finer granulated sugar. You can use regular granulated sugar at the same weight; it just takes a little longer to dissolve when creaming.
- If your sugar has formed clumps, break them up before measuring so the cup fills evenly.

Sources and method
The cup weight on this page comes from King Arthur Baking's Ingredient Weight Chart, which lists granulated sugar as 1 cup = 7 oz = 198 g. All other figures are calculated from that weight using a US customary cup (236.6 mL), 16 tablespoons per cup and 3 teaspoons per tablespoon. Using a 250 mL metric cup? Multiply the grams by about 1.06. Brand, humidity and measuring technique can shift real-world weights by a few percent, so weigh when precision matters.
